We always find ourselves with an overabundance of squash and this is one of my absolute favorite recipes to make. It is easy and flavorful and we just can’t get enough of it.

If you haven’t tried it before but are a squash lover then now is the time. Because I am giving you The Best Butternut Squash Soup Recipe out there.

I might be biased but working with food and in the food industry for so long I’ve tasted many in my day and this one I perfected to my favorite taste.

Butternut squash
Potato
Carrot
Onion
Chicken or vegetable broth
Lemon juice
Vegetable oil
Garlic
Cinnamon
Ground nutmeg
Salt
Pepper

HOW TO MAKE THE BEST BUTTERNUT SQUASH SOUP RECIPE:

  1. Warm up vegetable oil in a medium or large pot over medium heat and add potatoes, onion, carrot, butternut squash.
  2. Stir for 3-5 minutes and add the vegetable or chicken broth.
  3. Simmer the vegetables until they become soft, about 20 to 30 minutes.
  4. When done, add lemon juice, season with salt, pepper, cinnamon and nutmeg.
  5. With an immersion blender, blend the vegetables until creamy. You can also use a regular blender for this, you may need to blend in batches.
  6. Serve while warm with your choice of toppings.

HOW DO I GET A SUPER CREAMY SOUP?

We have 1-2 ways that you can blend this soup. One is with an immersion blender and that will be handheld and you can put that right in your pot.

The second way is to use a stand-up blender, you will put the rendered and cooked soup in it and then blend it. This will have to be in batches.

In my personal experience, a stand-up blender will produce a creamier soup because you will be blending all the soup at once rather than using the immersion blender and going around blending.

Both will become creamy but if you want a super creamy soup then I would suggest doing it in batches in the stand-up blender.

WHAT CAN I GARNISH OR TOP THIS SOUP WITH?

There are various things that you can garnish this with, that is the fun part of finding garnishes that you love the flavor of. Some ideas include:

  1. Sour cream
  2. Coconut milk
  3. Parsley
  4. Toasted pumpkin seeds
  5. Pumpkin seed oil
  6. Cheese
  7. Bacon or prosciutto

All of these are great options and work very well with this soup, so choose what you like, play around and have some fun.

HOW TO STORE:

This recipe can be stored in the refrigerator in an airtight container for up to 4 days.

It can also be frozen, make sure the soup is cool, and then place in a freezer bag where it will keep in the freezer for up to 3 months.

Let defrost overnight in the refrigerator and you can reheat on the stovetop or in the microwave.

Ingredients

  • 2 Tablespoons vegetable oil
  • 4 cups butternut squash cut into medium chunks
  • 2 medium potatos medium diced
  • 1 medium carrot medium diced
  • 1 medium onion small diced
  • 2 ½ cup chicken or vegetable broth
  • ½ of lemon squeezed juice
  • 2 garlic cloves minced
  • ½ teaspoon cinnamon
